How about a brief write up of a wine that I helped create. Ever hear of Crushpad? For a small amount of money, you can adopt a barrel of wine, design how the wine will be fermented, and finally pick a label. That’s 25 whole cases of something special. We created a 2008 Syrah and finally received our cases this summer (yes, it takes that long!).
We designed our wine to age 3-5 years for a drinking window. Of course, a few of us have had to open bottles early and they are a bit disappointing as one would expect.
Over the past weekend I did a 26 hour taste test (full notes available if you want!).
Basically, this wine isn’t ready yet and needs at least another year.
However, if you can’t wait….open and decant a bottle approx. 4-6 hours prior to drinking. It will still be a bit tannic, but opened up nicely to show the fruit and body.
